ICC Tony Panetta Executive Chef and CEO Geoff Donaghy

ICC Sydney taking culinary performance to the next level. Partnering authentic culinary experience with delegate diversity. Tony Panetta the Executive Chef uses a test kitchen to formulate new and innovative food concepts by working with nutritionists to set new levels in large scale food experience.

ICC Sydney’s CEO Geoff Donaghy shared what he thought to be the secret formula for success in creating extraordinary venues. Based on Location, Design, Technology, People Experts and his new take – Culinary Support.

Visitors are set to enjoy delectable world class dishes designed to fuel both body and mind across events and key outlets at International Convention Centre Sydney (ICC Sydney), the new premier convention, exhibition and entertainment precinct in Darling Harbour.

ICC Sydney will embrace an industry-first Feeding Your Performance philosophy to deliver menus comprising fresh, seasonal and ethically sourced ingredients, expertly combined to drive physical and mental performance.

Driven by the principles that delegates perform and enjoy their experiences far more if they have not only well designed and functioning venues, the integration of health and vitality plays a major role in ensuring their attention and well-being during an event.

Tony Panetta talk enthusiastically about the need to understand the needs of large scale catering and the nutritional makeup of foods for various palettes. Tony has a passion to harness both the science and appreciation to create interesting concepts.  His approach starts at the point of selection, choosing the best of in-season and local produce all the way through to delivery of “only in Australia” gala dinner banquet menus.

ICC Sydney is setting new standards by offering world class menus as well as venues.  Tony says “we are agile enough to cater a boardroom lunch for 10 while delivering  a gala dinner for 2000 – all with a personal touch.”
